Beetroot is one of the most studied ingredients in sports nutrition. It is classified as IOC Level A evidence—the highest tier for a performance supplement.
But how exactly does it work? Why does whole-root beetroot work while isolated nitrate salts fail? This guide breaks down the physiological science.

The Nitrate-Nitrite-Nitric Oxide Pathway
Beetroot is rich in inorganic dietary nitrate (NO₃⁻). When you consume it, it follows a specific two-step pathway to become usable energy:
- The Oral Step: Bacteria on the surface of your tongue convert the nitrate into nitrite (NO₂⁻).
- The Circulatory Step: You swallow the nitrite. It enters your bloodstream and is reduced to Nitric Oxide (NO) in areas of low oxygen (like working muscles).
Nitric oxide is a vasodilator. It signals blood vessels to widen, increasing blood flow and oxygen delivery.

Why Isolated Nitrate Fails
Many supplement companies sell synthetic nitrate salts, claiming they are the same as beetroot. The science says otherwise.
A 2022 meta-analysis in Advances in Nutrition examined 123 studies. It found that while whole beetroot juice significantly improved performance (P < 0.001), isolated nitrate salts did not (P = 0.629).
Why? Because beetroot contains a full matrix of compounds: nitrates, betaine, betalains, and polyphenols. These compounds work synergistically. The polyphenols protect the nitric oxide from oxidative stress, while the betalains reduce inflammation.
This is why Stamox uses a patented whole-root extract. Isolating the nitrate breaks the formula.
The Oxygen Cost Reduction
The most consistent finding in the literature is a reduction in the oxygen cost of exercise.
A foundational study by Bailey et al. (2009) found that dietary nitrate reduced the O₂ cost of submaximal exercise by up to 5%.
In practical terms: your mitochondria produce more ATP using less oxygen. You can hold a higher power output or pace without your heart rate spiking.
The Entero-Salivary Circulation
The oral bacteria step is critical. When you use antibacterial mouthwash, you kill the bacteria needed to convert nitrate to nitrite. Research shows this completely abolishes the blood pressure-lowering and performance benefits.
Avoid mouthwash, tongue scraping, and mints for at least 2 hours after taking beetroot.
